As I mentioned last week, this week’s menu plan would be late.  So instead of it being from Saturday – Friday, I’ll share our Tuesday – Friday meals.

If the recipe is available on line, I have directly linked it for you. If it’s my own recipe, I’ve included the details as well.  Keep in mind that the meals I select are based upon a combination of what I might find on sale combined with items from our pantry/freezer.

Keep in mind that I keep my life simple. I am a busy mom of 3 kids and to be honest, cooking is not something I love to do. I cook because I have to. So, these meals are planned around the simplicity that I look for when it comes to trying to figure out what to make for dinner.

MENU PLAN

Tuesday:  Spaghetti and meatballs, salad and french bread
Wednesday:   Chicken Bruschetta, green beans and rolls
Thursday:  Egg Salad Sandwiches
Friday: Dinner Out

MENU PLAN

Sunday:  Penny Pinchin’ Pick
Monday:  Hamburger Onion Pie
Tuesday: Spaghetti with meatballs, french bread, salad
Wednesday:  Leftovers
Thursday:  Grilled burgers and hot dogs, fresh veggies
Friday:  Church Fish Fry
Saturday: Chicken Bruschetta, salad and rolls

Hamburger Onion Pie

1 cup Bisquick
1/3 cup Evaporated Milk
1 lb hamburger
1-2 medium onions diced
1 tsp salt
1/4 tsp pepper
1/2 tsp Accent (optional)
2 Tbs. Bisquick
2 Eggs – Beaten
1 cup small curd cottage cheese

Preheat oven to 375.  Mix first two ingredients.  Knead for 15 – 30 seconds and roll dough into lightly greased pie plate.

Next, brown ground beef, onions, salt, pepper and Accent, until meat starts to brown.  Stir in the additional Bisquick.  Place mixture into the pie shell.

Bake at 375 for 30 minutes

Saturday: Chicken fried steak, mashed potatoes, green beans, rolls
