This recipe is one of my absolute FAVORITES! It is the perfect companion to any meat or poultry dishes and super easy to make! This one takes around 40 minutes to prepare, so not too long to have hot and ready for dinner.
24 oz of Frozen Hasbrowns (can do shredded or cubed – about 3/4 of the bag)
1 can Cream of Chicken Soup
12 oz of sour cream (about 3/4 of a 16 oz container)
8 oz grated cheddar cheese
3 tsp. dried onion
1/2 stick melted butter or margerine
Preheat oven to 350. Melt the butter and stir in everything other than the potatoes. Once well blended, stir in the potatoes. If you find you have too many potatoes, add in a bit more sour cream; if not enough potatoes, add in a few more. Bake in greased pan for 35 – 40 minutes (or until potatoes are cooked through). It can be helpful to stir them about 1/2 through cooking, to ensure they cook evenly.
Serve with your favorite veggie and meat or poultry item and enjoy!
