Just like Christmas, I love to bake on Valentine’s Day! It’s a fun holiday where you can make a ton of adorable themed treats to celebrate those you love. I also love when I can make something that looks super fancy, but it is actually just super simple! These Easy Valentine’s Day Cupcakes are so easy to make, you won’t believe it!
Strawberry cake mix
Red candy melts
Small plastic baggie
Make your cupcakes as directed. Ice them with the strawberry frosting any way you like. I like to use a plastic baggie and swirl the icing on top. If you have any sprinkles you want to add, do it right after frosting the cupcakes, so the frosting is still wet and the sprinkles will stick well.
Next, lay out a sheet of wax paper onto a cookie sheet or cutting board. I cut a sheet that was about as long as my forearm to give me plenty of room to work.
Then, microwave about a cup of the red candy melts in a medium sized bowl for thirty seconds at a time. Make sure you stir after each cook time. Repeat until they are smooth and melted. Quickly transfer the melted candies into a small plastic baggie. Cut a very small tip off one corner, so your baggie will act as a piping bag.
Draw several shapes onto the wax paper, making sure not to touch any of the designs to each other. I drew hearts, lips, the word, “love” and whatever else I could think of that was Valentine themed. Don’t make your designs too thin, or they will snap easily when you try to remove them from the wax paper. Place the cookie sheet or cutting board in the refrigerator for about 15-20 minutes.
Remove your designs from the wax paper carefully, and press them gently into the frosting of your cupcakes. The cupcakes won’t need to be refrigerated, but don’t keep them near a heat source either. Not only will your cupcakes look like a professional made them, but they’ll be delicious too! Happy Valentine’s Day!
