Today is my Mother-in-Law’s birthday. I will be kind and NOT divulge her age, but I wanted to do something special for her. So, I asked my friend Liz with Hoosier Homemade if she could make her something special. Since her favorite colors is blue, she came up with these yummy cupcakes! Happy Birthday Mary!!!

A little birdy told me that there is a special birthday coming up in Tracie’s family, and that special someone loves Coconut and the color blue.
When Tracie asked me to create some Coconut Cupcakes for her, I knew exactly what I wanted to share.
Because I’m a HUGE fan of Linky Parties, I started a new blog recently, It’s A Blog Party, and last week, Shelly from Cookies and Cups shared her Coconut Cake. I thought it would make perfect cupcakes for this very special birthday.
- Coconut cake batter made into cupcakes
- Frosting…I typically use Buttercream, the Marshmallow Frosting that Shelly has on the Coconut Cake looks divine
- Coconut plus Coloring in your favorite color
Bake cupcakes and let cool. Frost with a good amount of frosting so that the coconut will stick to it. Color coconut with 1-2 drops of Coloring, it doesn’t take much, the more the mix, the better the coconut color is.
Add the coconut to top and to sides by turning the cupcake on it’s side and dipping it into the coconut.
