Menu Plan Saturday: 3/19 – 3/26

If the recipe is available on line, I have directly linked it for you. If it’s my own recipe, I’ve included the details as well.  Keep in mind that the meals I select are based upon a combination of what I might find on sale combined with items from our pantry/freezer.


Sunday:   Chicken Parmesean, Salad, French Bread
Monday:   Chicken Panini, Fresh Veggies
Tuesday:  Pork Roast Sandwiches, Chips
Wednesday:  Leftovers 
Thursday:   Chicken Broccoli Alfredo, French Bread
Friday:  Fish Fry (at our church)
Saturday:   Shrimp Fried Rice & Strawberry Shortcake

Chicken Parmesean

2 – 3 Chicken Breasts (thinned slightly to help them cook easier)
1 egg
1/2 cup milk
1 – 2 cups of Italian Breadcrumbs
2 – 3 Tbs oil
Cooked Spaghetti Noodles
Spaghetti Sauce
1 cup of shredded mozz cheese

Pour oil into skillet and turn heat onto medium to warm it.  Combine milk and egg.  Pour bread crumbs onto plate.  Dip chicken breasts in milk mixture and then breadcrumbs (coat both sides).  Redip in milk mixture and breadcrumbs again.  Put chicken into skillet and turn heat down to med – low to cook.  Monitor and flip chicken so crumb mixture browns and chicken cooks.  (I use a knife and check occassionally until it is no longer pink). 

While chicken is cooking, boil spaghetti and warm sauce.  Once chicken is done, sprinkle mozz cheese on top of each and cover to let cheese melt.  Place noodles on plate and top with some sauce, chicken and then more sauce to finish. 

Pork Roast

I have a roast and some sauce from Tastefully Simple that I will pour on this and cook in the crockpot all day long.  We will serve it on crustini rolls

Chicken Broccoli Alfredo

1/4 cup butter
1 cup of cream
1 1/2 cups of grated parmesean cheese
1-2 cloves crushed garlic

2 – 3 chicken breasts, cooked & cubed
Fettucinni Noodles
1 cup of diced broccoli (can be frozen or fresh)

Melt butter and then add other ingredients. Stir until mixed.   Cook noodles as directed and cook diced chicken until no longer pink.  Add chicken and broccoli to sauce mixture.  Serve over cooked noodles.
