Menu Plan Saturday: 8/8 – 8/14

Are you ready for another Menu Plan Saturday?  Before you look at what I’ve planned for my family for this week, be sure to download/print your forms:

Weekly Menu Planner.  This form will hopefully help you better plan what you will eat each day of the week. It also includes a space for you to indicate where you found the recipe (i.e. my website, a certain page number of a cookbook, etc).

Weekly Shopping List.  You will find this list broken down into the same categories I use for my weekly deals.  There is also a check box so you can mark items off as you toss them into your shopping cart.  I’ve even added a “Q” next to each line item.  Simply circle this if you have a coupon for that product, so you don’t forget to use it when you head to checkout.

If you want a few ideas other than those listed below, be sure to check out  Each week you can find her Penny Pick here — meals planned on sales in the Kansas City area. Don’t worry, even if you don’t live in KC, you’ll still love her great ideas!

So, now, onto what my family will be eating this week.  If the recipe is available on line, I have directly linked it for you. If it’s my own recipe, I’ve included the details as well.  Keep in mind that the meals I select are based upon a combination of what I might find on sale combined with items from our pantry/freezer.

Sunday:   Roast with Potatoes & Carrots
Monday:  Grilled Hot Dogs & Brats, Chips & Veggies
Tuesday:  Penny’s Pick (surprising you this week – you have to click the link to learn what this is)
Wednesday:  Cheese & Onion Enchiladas
Thursday:  Leftovers
Friday:  Cheezy Chicken Simmer
Saturday:  Homemade Pizza

Cheese & Onion Enchiladas

6 Tortilla Shells
1 Package (8 oz) Shredded Cheddar Cheese
1 Can Enchilada Sauce
1 Med onion chopped
2 Green onions chopped
Sour Cream (optional)

Mix the 1/2 the sauce, onions and 1/2 of the cheese in a bowl.  Spoon into shells and roll and palce face down in a greased baking dish.  Cover with remaining sauce and cheese and bake 20 min at 350.  Top with green onions and sour cream.

Happy Dining!
