I am not a chef. Not even close. To be honest, I don’t even really LIKE to cook. However, I know that I have to do so as my family seems to think they need to eat (go figure)!!! That means I am looking for something that is quick an easy to make, which my family will love.
These Creamy Chicken Enchiladas fit the bill perfectly!! They take just a few ingredients and very little time to prepare (around 30 – 35 minutes) and they are simply delicious! I did find this recipe on Kraft Recipes and tweaked it a bit to work for my own family.
INGREDIENTS
2 1/2 cups of cooked chicken (I purchase Tyson Grilled chunks to make it go more quickly)
1 can cream of chicken soup
1 pkg of Cheddar Cheese
1 cup of sour cream (divided)
12 flour tortilla shells
1 1/2 cups of salsa
1/4 cup chopped cilantro (optional)
Preheat your oven to 350. Mix your chicken, soup and 1/2 cup of sour cream until well blended. Scoop into the center of the tortilla shells (around 1/4 cup) and roll. Place into a greased baking pan, seam side down.
Top with salsa and remaining cheese. Bake for 25 minutes. Top with remaining sour cream and cilantro (if you decide to do so). This recipe will make around 6 tortillas.
Serve with tortilla chips and enjoy!!!
