Homemade Chicken Pad Thai Recipe


  • Scratch Pad Thai Sauce
  • 2 TBSP Tamarind Paste
  • 1/4 cup Chicken Stock
  • 1 TBSP Fish Sauce
  • 1 TBSP Tamari Sauce
  • 1/2 TBSP Chili Sauce
  • 3 TBSP Brown Sugar
  • 1 Lime, juiced
  • Pad Thai Noodles Main Course
  • 1 package Pad Thai Noodles
  • 12 lbs Chicken Breast, Tenders or Thighs
  • 1/4 cup Green Onion
  • 12 scrambled eggs
  • 1 Lime, juiced
  • Garnish: crushed peanuts, cilantro and green onions


  1. In a medium sized pot boil 3-4 cups of water.
  2. Remove water from the heat and soak Pad Thai noodles for approximately 10 minutes.
  3. In a small bowl mix, Tamarind paste, Fish Sauce, Chili Sauce, brown sugar, juice of 1 lime and chicken stock.
  4. Drain noodles and place in a saute pan.
  5. Slather noodles with Pad Thai sauce, add green onions, eggs, and add more lime juice to taste. Add raw chicken directly to the mixture and saute for 7-10 minutes.
  6. Serve and top with crushed peanuts, cilantro and green onions.
