We tend to eat chicken a few times a week, and because of that, I am always looking for new ways to make it. Chicken is a great protein because it is easy to make different, but it is also tricky because all too often I feel like I fall into a “chicken rut”.
With the weather heating up and my desire to not be in a hot kitchen, I threw together this quick and easy chicken recipe that is perfect to grill. I made it with chicken tenders because they are the kids favorites, but it could also be made with chicken breasts or with chicken thighs – the cooking time would just need to be adjusted accordingly
Grilled Chicken Tenders
Ingredients:
2 T Olive Oil
2 T Water
1 T + 1 tsp Balsamic Vinegar
½ tsp Garlic Powder
½ tsp Onion Powder
½ tsp Salt
¼ tsp Black Pepper
¼ tsp Ginger Power
2 lbs Chicken Tenders
Directions:
In a large ziplock bag, add the first 8 ingredients. Gently mix them together in the bottom of the bag.
Add the chicken tenders. Squeeze all air out of the bag and seal. Gently coat the chicken tenders in the marinade by rubbing and squishing them around in the bag. They will not be swimming in the marinade, and this is okay – they are not supposed to. This is just to give them a light coating.
Lay the bag flat, on a plate, in the refrigerator for at least 30 minutes, but no longer then 1 hour.
Preheat grill to medium heat.
Grill chicken, turning once for about 10-15, or until the chicken is cooked through.
