  • ]3 cups all-purpose flour
  • 1 tablespoon plus 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 cups granulated sugar
  • 1 can (15 ounces) pumpkin puree
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • Cream Cheese Frosting Ingredients
  • 8 oz.cream cheese, softened
  • 1/4 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar (confectioner’s sugar)

Instructions

  1. Muffin Instructions
  2. Preheat oven to 350° F and line muffin tins with liners
  3. Stir together flour, pumpkin spice, baking soda and salt.
  4. In a separate large bowl, combine sugar, pumpkin puree, eggs, oil and juice.
  5. Add the flour mixture to the wet ingredients and beat on medium speed for 2 minutes.
  6. Spoon batter into muffin cups about 3/4 way full.
  7. Bake for 35 minutes.

  9. Beat cream cheese, butter, and vanilla until creamy
  10. Gradually blend in powdered sugar until smooth and fluffy
