My husband and I both recently had a chance to try risotto when we went out to eat. We both fell in LOVE with it and so I wanted to learn HOW to make this at home. There are a lot of recipes available on-line, so it can be difficult to sort through all of them. I actually found one that I loved!! The best part of all is that it cooks up in your slow cooker, so it takes little effort on your part.
SLOW COOKER RISOTTO
- 3 3/4 cups chicken broth
- 1 1/4 cups Arborio rice
- 1/4 cup olive oil
- 1/4 cup white wine
- 4 cloves garlic, minced
- 1 teaspoon dried onion flakes
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2/3 cup shredded Parmesan cheese
Just mix all items, except for Parmesan cheese, in the order given and in a slow cooker. Cook on low for 2 – 2 1/2 hours. Add in the cheese and cook until melted (around 15 minutes).
One thing I want to mention is that it will look very “soupy” for quite a while. Around 2 hours or so, it will suddenly begin to thicken up. I thought that I had messed up the recipe for a while, but it just takes a while for it to all meld together.
