Quick and easy is the name of the game for summer dinners. It is way too hot to be standing in the kitchen for any extended period of time … especially right in front of a stove! This is a great comfort food recipe that you can make quickly in a slow cooker!
Slow Cooker Goulash
2 tsp olive oil
1 lb. ground beef
1/2 large onion, diced
2 cloves garlic, minced
2 1/2 cups water
1 can (15 oz.) tomato sauce
1 can (15 oz.) petite diced tomatoes with juice
1 T Italian Herb Blend (any Italian Seasoning blend will work)
1 bay leaf
1 tsp. garlic powder
1 tsp onion powder
2 tsp. Montreal Steak Seasoning (use your favorite purchased steak seasoning)
salt and fresh-ground black pepper to taste
1 cup uncooked elbow macaroni
Preheat your slow cooker to high.
In a large non-stick skillet, heat up your olive oil, and add your ground beef. Cook until it is well browned, breaking up as it cooks. This should only take about 5-7 minutes. Drain off the extra fat and place pan back on heat. Add garlic and onion, cook for 2-3 extra minutes, until onions become translucent.
Add meat and spice mixtures to slow cooker with tomato sauce, diced tomatoes, water, bay leaf, and macaroni.
Cover and cook on high for 1 hour.
Serve with crusty bread and your favorite goulash topping — sour cream, cheese, red pepper flakes, or plain!
